I Like Thursday #361

It's definitely November.  We went from 73 degrees and the golf course on Tuesday to 45 degrees and gloomy Wednesday.  It felt like a baking day, so I decided to make some muffins.  Did you know you can substitute pumpkin for the oil in a muffin mix to get pumpkin muffins?


These turned out so good, especially warm right out of the oven!


I walked down to see my mom by way of the sculpture park the other day.  This spot was so pretty - hard to capture in a photo.  All the dried grasses by the wetland area were rustling in the breeze, and there's a dragonfly sculpture hiding among them.  Can you see it?

LeeAnna's question of the week: Would you rather go apple picking or carve a pumpkin?  My answer: Both!  We can pick apples right here in our yard, and usually get a lot of them.  My favorite thing to make from our apples is applesauce.


I also love to carve pumpkins, although I don't do it very often anymore.  Here's my most recent jack-o-lantern - you might remember this one because I'm sure I shared it back in October of 2020!


And one more fun thing to share.  Do you read the cartoon, "Pickles?"  I just love Earl and Opal.  They could be Mike and me!

here too dropping in temperature - I woke up early today as the cold air coming through the open windows woke me up - the cold front came through - back to fall again - we had summer again this past week with temmps near or at 80/66 now 60/40?
so when using a muffin mix you don't use oil but a can of pumpkin? I wonder how that would work with a muffin recipe?

Those muffins look wonderful. I would spoil the healthy aspect by slathering it with butter. Back when Hubs was undergoing physical therapy at the heart hospital after his heart attack, I would go with him and got to use the exercise equipment for free. One day as we were leaving one of the nurses brought in a plate of cookies she had made from a cake mix, some mini chocolate chips, and pumpkin. She said they were healthy, so I grabbed a couple, and they were delicious!
Hope Mike is feeling better.

I love Pickles, they are hilarious. I've heard of using applesauce instead of oil, but not pumpkin. What an interesting idea!

I didn't know that about pumpkin. . .I'll have to give it a try! I do enjoy an apple crisp and have made many quarts of applesauce in my earlier years. The sculpture park sure is a beautiful spot. We too have had colder temperatures and a lot of rain. Already, I'm looking forward to spring and longer days!

It was almost 80 yesterday in northern Kentucky. We could feel the temperature dropping this morning as we girls were sipping coffee on the front porch of the retreat center.

I didn't know about substituting pumpkin for the oil! That cartoon made me chuckle, I am always teasing DH about the crumbs he leaves! How is your DH feeling today?

Yes it was 80 and sunny yesterday, it's supposed to get to 60 today, but it's cloudy. Love the Pickles cartoon. Yeah it's not a bad approximation of me and My Guy either.

Great tip on turning plain muffins into pumpkin ones! I wanted to walk through the sculpture garden the last time I was in Loveland but no one else did at the time. Next visit, everyone better have on their walking shoes! Haha!
