Look at this cute wreath! It's decorating the hair salon where I take my mom for her weekly appointment. I had to share a picture of it here!
We were supposed to get a blizzard Tuesday, and although we actually didn't get any snow here (it skipped us and landed on the eastern plains), it still felt like a cookie baking day. I had been wanting to try this recipe from Dessert for Two: Almond Flour Peanut Butter Cookies. Have you baked with almond flour? This was my first try. It's gluten free and much lower in carbs than all purpose flour.
Two things I noticed - they're very thin, and didn't brown very much.
But they do taste good - a little crispy, a little chewy.
It's a small batch recipe, but still made 1 and 1/2 dozen.
All the posts and comments from a few weeks ago when we shared favorite Christmas movies lead me to this one, "The Holiday." We watched it over the weekend, and I really enjoyed it!
There are some good actors in this one: Jude Law, Cameron Diaz, Kate Winslet, but my favorite was Jack Black. His character is a music score composer for movies.
And speaking of music... what's your favorite Christmas song? I love almost all Christmas music, from silly to serious. It might be easier to tell you a Christmas song I don't like: Santa Baby! Ugh. 👎 I do love the Denver radio station that plays Christmas music 24/7 from sometime in November through Christmas. And I love my Christmas CDs. Here are just a few!

Jim Brickman, Kenny Chesney... I have lots more!
When I was teaching, I played Christmas CDs for the kids at different times of the day, depending on what we were doing. They loved the Polar Express soundtrack, of course, and always sang along to "Hot, hot, hot chocolate!" A good memory!

ReplyDeleteI have used almond flour off and on the past couple years and most of the time I find very little difference in things like chocolate chip cookies - it is a "dryer" "grittier" flour I guess you could say but now and then if someone is gluten free and stopping by I use it.
ReplyDeleteI actually like Santa Baby LOL but then I like the movie Die Hard also which I consider a Christmas Movie and so does my granddaughter but few others do I guess. I watched a Christmas movie last night called "Angel Falls Christmas" it was ok but predictable - the type you find from Hallmark channel but it was on Prime or Netflix I think
For years I've listened to "Carols from the Old and New Worlds," sets 1 and 2, performed a cappella that includes traditional music from England, Europe, and the U.S. My favorite contemporary song is Star Child (https://www.hopepublishing.com/find-hymns-hw/hw2945.aspx)

I love my Jim Brickman CD too!!! His music is beautiful! I'll have to check out that movie this week too. Bet Mom would like it. Speaking of Moms, mine has her standing weekly hair appt too. So sweet of your mother's hairdresser to decorate with winter penguins for you! haha!
ReplyDeleteOoh! I need to find the Polar Express sound track! That would be an awesome addition to my collection. I haven’t done a lot of GF baking, usually use the 1:1 Gluten Free from Bob’s Red Mill. Some recipes are better than others. Trial and error! Now that DD is living with us….I have to be careful! Granddaughter is GF, but daughter Is allergic to all nuts. It’s tricky! Oy vey! Two separate batches of almost everything!
ReplyDeleteLevel 2 Emergency in Gillette again. They lifted it at 4pm on Wednesday, bit got more snow and wind overnight! No school, DD cancel patient visits, no unnecessary travel! Yuk! Glad we aren’t there, but my peeps are!
Santa Baby is the only Christmas song that will cause me to leave the room (or the store). I don't care who sings it, I hate it. You sound like a fun teacher - I would've loved being in your class! Penguins on a wreath - how cute! I need to watch that movie!

ReplyDeleteI've baked with ground almonds lots of time. A little coconut flour will help it absorb liquid. Ooh - you have lots of albums. We listen to a lot of Windham Hill stuff. :-)
ReplyDeleteSad to say, but I bet you couldn't get away with playing Christmas CDs in the classroom these days, at least in some areas of the country. We had a wintry mix today, but not as much accumulation as they predicted. More expected this weekend, including another lake effect storm south of Buffalo where the Bills will be playing the Dolphins on Saturday night. Could be interesting.

ReplyDeleteMy favorite Christmas movie is Love Actually. I watched it so many times that Paul forbade me to watch it except in the month of December :-D I went to a catholic school and still remember many carols. Usually I don't think about it till I hear one of them and then much to Paul's surprise happen to sing along :-D

ReplyDeleteThat is a good movie! I need to get busy watching the Christmas movies this week. Polar Express is on the list. One song I love is Belleau Wood by Garth Brooks. A sad one but, being a history buff I love it. Always makes me tear up though.

ReplyDeleteOf course you like that wreath! ;) I love all the old Christmas carols and songs like I'll Be Home For Christmas, but my very favorite is Jingle Bell Rock by Bobby Helms because that is the first song my husband and I skated to on our first "date" at the roller rink - lol! Your cookies look good. My one and only foray into GF baking was a disaster (communion bread that crumbled all over the sanctuary floor).
